Swiss Watchmaking Meets Bespoke Hospitality

On October 3, 2026, Swiss independent watchmaker Bianchet celebrated its launch in Japan at Aoyama Park 9ine × TGX Golf, in Tokyo’s Minami-Aoyama district. In the presence of co-founder Rodolfo Festa Bianchet, the event brought together collectors and influential figures from Japan’s specialist watch media for a day dedicated to contemporary Haute Horlogerie, sporting performance and gastronomy.

Organised in collaboration with SwissPrimeBrands, Bianchet’s official distributor in Japan, the launch offered guests the opportunity to discover the Maison’s collections in an interactive setting.

Tokyo Catering Club was entrusted with providing hospitality throughout the day, developing a bespoke culinary programme inspired by the Maison’s identity, alongside signature cocktails, premium beverages and an evening reception for Tokyo Watch Club.

At the heart of the culinary concept was the Bianchet Rotondo UltraFino Carbon Sky Blue, whose remarkable lightness, high-density carbon construction and striking colour palette provided the creative direction for the menu.

Bianchet Rotondo: Swiss Watchmaking, Lightness and Performance

Founded by Rodolfo and Emmanuelle Festa Bianchet, the Maison has established its identity around the flying tourbillon, combining traditional Swiss watchmaking craftsmanship with contemporary materials and engineering.

The Rotondo UltraFino Carbon Sky Blue embodies this philosophy. Its round, high-density carbon case measures 39.5 mm in diameter and just 8.9 mm in thickness, while the watch weighs only 48 grams, including its integrated carbon bracelet. At its heart is an in-house automatic flying tourbillon movement, engineered to withstand shocks of up to 5,000 G.

This combination of mechanical complexity, exceptional lightness and resilience was reflected in the format of the Japanese launch.

At TGX Golf, located within Aoyama Park 9ine, guests participated in a golf driving competition while discovering the Maison’s timepieces. Although the competition was not a technical test of the watches’ shock resistance, it offered a sporting interpretation of Bianchet’s engineering philosophy, connecting the experience of golf with watches designed for an active lifestyle.

Throughout the day, collectors and leading figures from Japan’s specialist watch media were welcomed in an environment where product discovery, conversation and hospitality could unfold naturally.

A Bespoke Culinary Concept Inspired by the Rotondo

For Tokyo Catering Club, the challenge was to translate the identity of the Rotondo into a gastronomic experience without reducing the menu to a purely visual exercise.

The black carbon case, sky-blue accents, Swiss origins and technical precision of the watch informed the choice of ingredients, colours and presentation.

The resulting menu brought together four savoury creations and two bespoke pastries, combining European gastronomic references with selected Japanese ingredients.

The savoury selection included:

  • Champagne Crème Fraîche & Caviar Tartlet — a delicate tartlet combining Champagne-infused crème fraîche and caviar.
  • Kagoshima A5 Wagyu & Fresh Truffle Bun — A5-grade Kagoshima Wagyu beef and fresh truffle served in a black bun, finished with a bespoke Bianchet flag.
  • Smoked Goat Cheese, Karasumi & Caviar Tartlet — smoked goat cheese paired with karasumi (Japanese bottarga) and caviar.
  • Shoyu-Lacquered Hokkaido Scallop, Myoga Sour Cream & Ossetra Caviar — Hokkaido scallop glazed with shoyu, complemented by myoga sour cream and finished with Ossetra caviar.

The selection balanced the richness of European fine dining with the flavours and character of Japanese ingredients. The black Wagyu bun created a direct visual connection with the Rotondo’s carbon case, while the other preparations explored contrasts of texture, freshness and umami.

Every piece was designed to be enjoyed comfortably throughout the event, allowing guests to move between the golf simulators, watch presentations and conversations without interrupting their experience.

This approach reflects our philosophy of applying the omakase principle to event catering in Tokyo: the culinary direction begins with the event, the people and the story it seeks to tell.

Two Bespoke Pastries by Swiss Chef Normand Jubin

The pastry selection was developed in collaboration with Normand Jubin, a Swiss pastry chef whose career includes the three-Michelin-starred Restaurant de l’Hôtel de Ville de Crissier and his position as Chef Pâtissier at Andaz Tokyo.

For this occasion, the creative brief focused specifically on the Rotondo Carbon Sky Blue, translating its carbon construction, signature colours and exceptional lightness into two contrasting creations.

Black Charcoal Tropézienne — Swiss Double Cream & Madagascar Vanilla

The first creation was a miniature Tropézienne incorporating vegetable charcoal, filled with Swiss double cream and Madagascar vanilla seeds.

Its deep black appearance evoked the high-density carbon used in the Rotondo’s case, while the double cream offered a direct reference to Swiss culinary tradition. Madagascar vanilla brought aromatic depth to the pastry.

Sky Blue Tea & Yuzu Marshmallow — Bianchet Signature

The second creation was an airy marshmallow combining blue tea and Japanese yuzu, finished with an edible Bianchet logo crafted from Valrhona chocolate.

Its delicate texture was inspired by the remarkable lightness of the Rotondo Carbon, while its sky-blue appearance echoed the colour accents of the watch itself. The yuzu introduced a distinctly Japanese flavour, complementing the Swiss inspiration of the first dessert.

Together, the two pastries expressed the contrasts found in the Rotondo: technical strength and lightness, black carbon and sky blue, Swiss craftsmanship and Japanese sensibility.

Signature Cocktails and All-Day Hospitality

The beverage programme continued this interpretation of Bianchet’s identity, with signature cocktails developed to complement the culinary selection.

The Tourbillon Mule combined Japanese whisky, ginger beer, fresh lime and edible gold dust, while the Sky Blue Tonic brought together Japanese gin, blue curaçao, lemon and tonic. Alcohol-free interpretations allowed guests to enjoy a coordinated experience regardless of their drinking preferences.

The wider beverage programme included Pommery Brut Royal Champagne, Mariage Frères blue iced tea, iced coffee, still and sparkling water, and homemade elderflower and lime lemonade.

From 12:00 PM to 8:00 PM, Tokyo Catering Club provided continuous hospitality as collectors, guests and prominent members of Japan’s watch media discovered Bianchet’s collections and participated in the day’s activities.

The service was designed to accompany the programme discreetly, with food and drinks available around the presentations, golf sessions and conversations.

At 6:00 PM, the event moved into its final chapter with a cocktail reception for Tokyo Watch Club, a Tokyo-based community bringing together watch enthusiasts and collectors.

Its members were invited to discover the Maison, explore its collections and exchange around their shared interest in independent watchmaking, with Tokyo Catering Club continuing the hospitality experience into the evening.

When the Cuisine Belongs to the Maison

The Bianchet launch offered another opportunity for Tokyo Catering Club to explore the relationship between independent Swiss watchmaking and bespoke gastronomy.

Earlier in 2026, our team supported the opening of the world’s first Romain Gauthier salon in Ginza, with an entirely different culinary programme built around private fine dining, craftsmanship and the intimacy of the salon.

Both projects involved independent Swiss watchmakers, but each required its own expression of hospitality.

For Romain Gauthier, the experience centred on the progression and elegance of a private dinner. For Bianchet, the response was more dynamic, with a menu and beverage programme inspired by the lightness, technical performance and visual identity of the Rotondo.

What they shared was the same starting point: understanding the Maison before designing the cuisine.

For Tokyo Catering Club, a cuisine that belongs to the event is one in which food and beverage become an integral part of the occasion, from the ingredients and presentation to the rhythm of service and the experience of each guest.

時計のブラックカーボンケース、スカイブルーのアクセント、スイスというルーツ、そして精緻な技術を、食材の選択、色彩、プレゼンテーションに反映しました。

完成したメニューは、ヨーロッパのガストロノミーと厳選した日本の食材を組み合わせた、4種類のセイボリーと2種類の特別なデザートで構成されました。

セイボリーには、次の4品を用意しました。

デザートは、スイス出身のパティシエNormand Jubin(ノルマン・ジュバン)シェフとのコラボレーションによって開発しました。スイスのミシュラン三つ星レストラン「Restaurant de l’Hôtel de Ville de Crissier」で経験を積み、アンダーズ 東京でシェフパティシエを務めています。

今回のクリエイティブブリーフでは、Rotondo Carbon Sky Blueを中心に、そのカーボン素材、特徴的なカラーコード、驚くべき軽量性を2種類の対照的なデザートで表現しました。

Tourbillon Muleは、日本のウイスキー、ジンジャービア、フレッシュライム、食用ゴールドパウダーを組み合わせたカクテルです。一方、Sky Blue Tonicには、日本のジン、ブルーキュラソー、レモン、トニックを使用しました。アルコールを飲まないゲストにも同様の体験を楽しんでいただけるよう、ノンアルコールバージョンも用意しました。
